Homemade Chicken Souvlaki Recipe - FP or S or E

Ok, so I have a friend who requested that I post this recipe with photos step by step on how to make chicken souvlaki.  The main part for the chicken souvlaki (or any other souvlaki dish is the tatziki sauce.  The sauce would be a FP. 

I'll begin however with the first thing.   First you cook 4 chicken breasts or 10-12 chicken tenders in a little oil to brown and cut up into 1 - 2 inch pieces (or larger if you like)Then when the chicken is almost done chop up around 1/4 of an onion very small.Add the onion to the chicken and let the onions cook a little (not brown)While you are cooking your chicken you make the sauce.  Fixed according to these directions you would have an S meal.  But if you wanted a FP or E meal you could bake your chicken or cook it in a non stick skillet with some olive oil spray.

1/2 of a large cucumber or 1 small cucumber seeds out and chopped very small.
1 cup of greek yogurt (you can use plain regular yogurt but you have to strain it in a cheesecloth for hours before hand and make sure all the liquid is out so it's best to use greek)
1 - 1.5 tsp of dill
1 TBS of Olive Oil (or whatever oil you have on hand)
1 tsp lemon juice
1 tsp of white wine vinegar
1 tsp garlic
half of a tomato diced (optional but it makes it taste oh so good!)
salt and pepper to taste

Mix first 7 ingredients together in order and stir well. Then add tomato and stir gently to incorperate. When chicken onion mixture is done pour it in tzatziki sauce and spoon into halved pita breads split open. They will remind you of a pita pocket. I cut the pita in half and then open it up. You can garnish with shredded lettuce if you like. I have also tried flat bread and it works well also but you don't split it in half you just fold it over and fill. You can also place in hoagie buns but you would have to make more sauce and chicken if you chose that route. This serves 4 people using pitas and take around 30 minutes to make. This can be served hot or cold. If you have the tzatziki sauce already done when the chicken and onion get done then it will be warm and you won't have to heat it.
